Ernestos Fajita Factory Cozumel  since "1985" 

Ernesto introduced fajitas for the first time in Mexico back in 1985 when you could only find fajitas in Texas. Texas is where the now famous fajita dish originated, actually in the South of Texas on ranches cooked Mexican cowboys. 


The original fajitas were cooked using the part of the beef called the skirt steak. The fajita name comes from the word (faja) which translated means a band to hold in your stomach. It is marinated and cooked with onions on a hot iron plate and accompanied with pico de gallo, guacamole and flour tortillas to roll your own taco. 


It later became a must in Mexican restaurants. Since then Ernestos has been the place to enjoy a great fajita using his original recipe. Ernestos is a favorite hang out for divers, snorkelers or just the tourist, enjoying the coldest beer $1.50, chimichangas, burritos, enchiladas, quesadillas, nachos, guacamole, shrimp, fish and awesome margaritas, mojitos, pina coladas and more, overlooking the amazing caribbean sea.
