Cozumel seafood restaurant La Perlita with sensational Lion Fish dishes

Seafood restaurant "La Perlita" in Cozumel Mexico serves now different Lionfish dishes and plates! Sensational!!!

"La Perlita",counts to one of the best seafood restaurants in Cozumel offers now Lionfish dishes.

This exotic species: "Pterois volitans" "Lion fish" also known as "red fire Angel"- that is not native to the reefs of the island Cozumel is a species of venomous marine fish that continues to spread throughout many parts of the island reefs. They are actually eating their way through the Atlantic reefs, causing the most devastating marine invasion in human history and also put the beautiful reefs and marine life of Cozumel at risk.

Facing this problem the owners of restaurant "La Perlita" are actively helping to control the Lionfish population by preparing exquisite plates like:
Ceviche Lion - a real specialty.
Chopped fish filet bits in a fresh sauce of lime, mango & chili.
Served cold & mouth watering!!

Cozumel Restaurant Guide suggestions
Kilete a la Kisin. Little fish filets in a tasty red sauce...a must try!!

Also fried or grilled lionfish fliets are available...everything we (CozumelRestaurantGuide.com) tried was "yummie yummie". Usually 30-40 Lionfish add up to 1 kilogram (approx. 2 pounds) of fish - of which we can prepare 1 portion (350 gr) of the delicious filet" explains Gladys Tun ("La Perlita").
Therefore your reservation is required.

Lionfish have venomous dorsal spines that are cut off before they arrive at the chef´s kitchen. However - for security reasons every Lionfish
has to be frozen for at least 3 hours in order to transform its poison into protein.

The chef´s of "La Perlita" also educate other local chefs how to prepare the "red fire angel". In cooperation with the department of the National Marine Park Cozumel, the Office of Tourism Cozumel and Canirac (restaurant association of Cozumel) and local fishermen -
Cozumel seafood restaurant "La Perlita" is the first restaurant on the island that is actively helping to save the reefs.

Thank you "La Perlita" !!

COZUMEL WINE TASTING NIGHT IN GUIDO'S RESTAURANT /Chardonnay/Merlot/Pinot Noir...

Excellent Wine Tasting Night at Guido’s Restaurant last Saturday.

Yvonne Villiger created a delicious 8-course gourmet meal with an excellent tasty wine ensemble that was presented by Dr. Pierre Jacquemin.

More than 25 wine lovers visited Guido’s restaurant and where very pleased by all the different wine flavours that are imported out of France.
For more information about France, please read wikipedia : http://en.wikipedia.org/wiki/French_wine

The meal started with an Aperitif - a sparkling wine "Louis Loron Brut Rose" that is also known as "Crèmant de Bourgogne". Manufactured since 1973 in the French city Moussex.

This sparkling wine is fermented in the bottle, which is a method of sparkling wine production originating in the Champagne region where after the Cuvee has gone through a primary yeast fermentation. The wine is then bottled and goes through a secondary fermentation where sugar and additional yeast known as liqueur de tirage is added to the wine. This secondary fermentation is what creates the carbon dioxide bubbles that sparkling wine is known for.
An excellent choice for an Aperitif in a warm Caribbean region like Cozumel Island.

The first course this evening was a nicely made tostada with Dorado Fish in tomato, cilantro, red onions and avocado served with a white Pinot Gris, Reserve "Gustave Lorentz", from Bergheim region Alsace.
Characteristics: floral, aromatic, light, sweet, long in taste. Very good for seafood and fish, can be served with cheese or as Aperitif.

The second highlight on this wine taste dinner was handmade Raviolinis filled sheep cheese and butter. Served with a "Coulin Bourisset" Pouilly - Fuissè a Chardonnay; a white wine with a rich aromatic flavour, fruity and floral, long in taste.

Followed by a tasty filet of a Wahoo fish on potato puree with home made remoulade.
This meal was served with "Palliser estate" red wine which is originated in Martinborough, New Zealand. An extraordinary selection of red wine served cold and suitable to poultry, cheese, sausages and ham.
Characteristics: "Pinot Noir" Fruity with a touch of earthy yet light and vivid in taste - can be served cold without loosing its fruity taste.

What would Guido’s Restaurant be without having their special wood oven pizzeta with zucchinis, garlic in olive oil? That gave us a brief break in between all the fantastic tastes - but only a short one because the taste of the new served wine brought us back in to the wine country France...back to "Mercurey" which is a small Village in Borgonia. Mercurey is the largest wine-producing area of the Côte Chalonnaise in Calizia and contains 30 premier vineyards.
Around 90% of the wine production is red, from the Pinot noir grape.
Characteristics: it is a light wine, with a typical aroma for a red wine out of this region in France (forest, mushrooms and leather). Very good for meals like: snails, ham, wildfowl and red meat.

The next dish "Osso Buco di Maiale" cooked meat on Risotto Milanesa with a real tasty brown sauce. An awesome meal: light and nicely decorated. It came with a red "Chàteau La Gorce".
This red wine is a mix between 2 Red Wines"60% Cabernet Sauvignon" and 40% Merlot.
Characteristics: A middle strong wine, with mature fruit and mushroom aroma, long in taste.
This wine is an excellent choice for ham, wildfowl, red meat, meals with brown sauces.

The 7th dish was a Filet Mignon, marinated in wild black truffles on potato puree. An exceptionary flavour of a filet - nice and soft like filets really should be.
The selection of wine for this course was a Chàteau Patris 2004 from Saint Emilion Grand Cru.
Saint-Émilion is located 35 km (22 mi) northeast of Bordeaux, between Libourne and Castillon-la-Bataille. The ground is 100% limestone so it tastes really extraordinary. Chàteau Patris is also a mix, 80% Merlot and 20% Cabernet Franc.
Characteristics: a very tasty red wine, fresh for his age, fruits and flowers flavour, long in taste.
Should be served for red meat, wildfowl, fat meat or meat plates.

The dessert: Strawberry with seasonal berries merengue and vanilla cream.
Served with an extraordinary "Muscat Beaumes de Vines" from Cote du Rhone, this wine grows on a granite ground.
Characteristics: highly aromatic, with all the flower of Muscat and complex aroma fruit such as pineapple and kiwi. Serve this wine cold with ice cream and fruits.

The team around Yvonne Villiger is always serving all those delicious dishes and the wines with
a warm welcomingly atmosphere.

All wines were presented by Dr. Pierre Jacquemin, who is a well-known wine expert and wine merchant from Naucalpan, Mexico.

Cozumel buisness tables/people watching/family friendly/best views and outdoor restaurants

What places in Cozumel have large tables?
Nearly all of the restaurants in Cozumel Island are having enough space for big groups.
If you are planning a wedding or a conference with large groups with 50 to 400 people you should go in one of the Hotel conference rooms,
or Cozumel`s Hacienda Restaurant Casa Mission. This Restaurant is an old hacienda complex with enough space for conferences, weddings and big parties.

The Cozumel Restaurant Guide recommends hotels with big conference rooms like: Occidental, Playa Azul, Casa del Mar, Nachi Cocom, Hotel Cozumel, Melia Hotel.
Most of these hotels are also offering an excellent restaurant with a good service.

Business Dining
If you like to meet your business partners here on the island , you should go in restaurant with wireless internet a good coffee and nice pastries.
All this is possible in Cozumel. Many restaurants are offering wireless internet connections for free.
Cozumel Restaurant Guide recommends restaurants like:
Perro Verde for excellent quiet ambience.
Mosaicoz has wireless for free, excellent coffee and pastries - you can sit outside in the heart of the town.
Restaurant Chi offers Asian cuisine on the second floor with ocean view, free wireless internet, good coffee and excellent Asian dishes.
Guido’s Restaurant is a perfect place to have a business meeting, wireless internet connection, pastries, coffee and excellent service. Guido’s has a northern Italian cuisine and great-relaxed ambience.

Dining with a View
Cozumel is a flat Island so it is not easy to get an overview somewhere, but there are 2 restaurants with a higher ocean overlooking view than others:
We recommend the Restaurant Prima Trattoria with the highest point in Cozumel in the 7th floor at the top of the El Cantil Condominiums. That is about 40 meter or 120 feet above the ground, feeling like being seated directly over the ocean.
Prima Trattoria is located in front of the new City hall park. The restaurant has an elevator, free wireless internet connection, and excellent service.
The Asian restaurant Chi is located on the Malecon street (RE Melgar) in the heart of Cozumel. The restaurant is in the second floor and has a nice balcony and on a nice sinny day you can even look all the way to Playa del Carmen on the mainland.

Family-friendly Dining
Mexico is a country where the family is the most important in a Mexicans life.
Most restaurants that are listed in the Cozumel Restaurant Guide are family friendly restaurants including: kids menus, kids chairs, playgrounds, pools for kids , nanny service etc....
Please have a look at the cozumelrestaurantguide.com to find the best restaurants for your needs.

Outdoor Dining
There are a lot of restaurants in Cozumel where you can sit outside in a nice garden, on the beach, on a balcony with an nice overview, or on the main plaza in the centre of Cozumel in order to have a nice dinner with friends and family.

Restaurants like: "La Veranda", "Chi", "Mosaicoz", "Guido’s", "Perro Verde", "La Perlita", "Las Palmas", "Buccanos", "San Carlos" ,"Tiki Tok",
"Prima Trattoria", "Hog Town Cafe", "Ernestos", "Casa Mission",” Parilla Mission" and the "Bob Marley Bar". For more Info visit the page cozumelrestaurantguide.com

All these restaurants listed here in this article have excellent food, a nice ambience and are highly recommended for nice outside dining.

People-watching
If you like to see people walking, shopping, chatting or couples flirting in the park,
you should go to the restaurant Mosaicoz on the main plaza in the heart of Cozumel.
Mosaicoz offers excellent pizzas, salads, coffee, cocktails, icecold beers etc... The restaurant has tables outside with sun covers, wireless internet and a great service. If you like to be in the middle of Cozumel this is the right place for you.
A local Salsa Band is playing every Sunday on this plaza, no cover, the band plays for free and all the Cozumelenians are dancing.
CozumelRestaurantGuide recommends Mosaicoz for the best “people watching” place.

The end of the reefs in Cozumel

COZUMEL, March 24 .

There is still no effective strategy to stop the population of lionfish in the reefs of Cozumel, which could be a trigger for an invasion of this species.
The reefs of Cozumel are counting to the second largest barrier reefs in the world. The longest barrier reef in the Carribbean Ocean, with an area of thousands of square miles, get new attention in the presence of an exotic, dangerous fish, the lionfish (Pterois volitans).

Marine Park Authority and local divers have been given the task of catching every fish sightings to curb its population growth. Although this measure is not sufficient, because the fish is laying between 15000 to 30000 eggs every four days.
Within one year marinepark helpers and divers captured about 1600 fishes, mostly in the marine park, south of cozumel. A fishing tournament last week brought 279 fishes in five hours to the surface.
Cozumel measures 48 miles from north to south and 16 miles from east to west, the Marine Park occupies less than 40% of the island, starting on the "Paradise Reef" and covers a smaller area to the east (Maracaibo Reef), leaving 70% of the reefs in the east and north of the island, where nobody can make any effective control.
This will bring an invasion of the coasts, as happened in the Bahamas since 2004 when the first species where sighted there. In the Bahamas have been found up to 400 fish per hectar, almost five times more than in the Red Sea area where the presence of this fish is naturaly.
Experts from Universities in Mexico City, reveal that the lionfish may reduce 79% of the youth population of fish in a reef, and end the herbivorous species, bringing in a disproportionate growth of macroalgae, which would covering and killing the corals that are home to molluscs, crustaceans, and commercial fishes.
In the area north of Cozumel are lagoons and mangroves in which juvenile fishes refuge before leaving into the ocean, they become a easy prey to this voracious predator,
Since a year and a half this fish is counted in cozumel. It kills all kind of juvenilles in the reefs of Cozumel.
That means the end of the cristal clear water in the caribbean is near because of geting macroalgae which would covering and killing all our home corals.

Even though they are poisonous they do have some predators which are humans, large eels, angelfish, pufferfish, and more.
restaurantguide stuff:
If some body has this kind of enemy fishes in his Aquariums, bring those to cozumel that would help us a lot.
saludos

Ernestos Fajita Factory Cozumel  since "1985"

Ernesto introduced fajitas for the first time in Mexico back in 1985 when you could only find fajitas in Texas. Texas is where the now famous fajita dish originated, actually in the South of Texas on ranches cooked Mexican cowboys.

The original fajitas were cooked using the part of the beef called the skirt steak. The fajita name comes from the word (faja) which translated means a band to hold in your stomach. It is marinated and cooked with onions on a hot iron plate and accompanied with pico de gallo, guacamole and flour tortillas to roll your own taco.

It later became a must in Mexican restaurants. Since then Ernestos has been the place to enjoy a great fajita using his original recipe. Ernestos is a favorite hang out for divers, snorkelers or just the tourist, enjoying the coldest beer $1.50, chimichangas, burritos, enchiladas, quesadillas, nachos, guacamole, shrimp, fish and awesome margaritas, mojitos, pina coladas and more, overlooking the amazing caribbean sea.

Scott: "I'm making a deal with my renters in the states, they are having trouble coming up with all the rent, so I'm spliting the difference with them - donating the whole amount they're short... A double charity, sort of! I wish to pass this idea on to people with their own businesses, split your profit margin! You'll still be able to eat today!"

18 food Hammerhead shark sighted in Cozumel

A giant 18 food hammerhead shark was sighted near by the shore of cozumel.

Dive Instructor Luis from Diveshop Deep Blue told us today , that he was in the water with 4 students to do there first open water course lessons.
We stayed near by the beach in maybe 3 feed deep water to explain the handling of masks and regulators, when suddenly a giant big hammerhead passing there back.
The students where absolute excited about this beautiful animal, but also scared the hammerhead was just 3 feed away and 18 feed long.
The hammerhead was not realy interested in us, said "michele" from france, instructor Luis said that this shark is verry known by dive instructors from couzmel. Some people call him "Beppo the head".
"Beppo the Head" is sighted by the shore since years from many people, they all say that the shark has a enormes size. And never attacks, he is just saying hello and than dissapearing in the caribbean.
Fishermans from cozumel are saying that in the 50 `s and 60`s hammerheads where verry often in Cozumel , big scools with 200 animals where normal.
Today only "Beppo the head" is sighted.

The "blue moon" 2009 and the "sunrise" 2010 in Cozumel

The first Sunrise 2010 in Cozumel
Hundreds of people are visiting the east side of Cozumel, to see the first sunrise of the new year 2010.
What happened there was incredible:
The new years evening from 31.th of Dec. 2009 to the 1. of Jan. 2010 started with a "Blue Moon" which means that the fullmoon happened two times in the same month, on the 1. of Dec. and on 31. of Dec. When the moon rises it had a strange blueish color around the edges - thats why it is called the "Blue Moon". It stayed not long - just some minutes, but very clear and visible.
In the morning when the sun rose, the sun popped out of the ocean at the horizon and we had a beautiful warm rain at the same time, the weather build a spectaculous rainbow with the "Blue Moon" inside the rainbow.
Thats how the new year 2010 in Cozumel started. Good luck to all of you.
Have a HAPPY NEW YEAR !!
